Almond Joy Banana Bread

Up level your snacks with this delicious and wholesome spin on your traditional banana bread ~ spiked with dark chocolate, coconut and almonds. Just YUM!

Lots of prebiotic fibre, healthy fats and some sneaky hidden veggies for good measure!

Ingredients:

  • 3 cups (250g) oats

  • 1 small zucchini, grated

  • 1/4 cup (25g) shredded coconut

  • 3 tbsp (30g) chopped almonds

  • 1/4 cup (60g) almond or peanut butter

  • 1 banana, mashed

  • 2 tbsp maple syrup

  • 2 tsp baking powder

  • 1 tsp vanilla extract

  • Pinch of salt

  • 1 1/2 cup plant milk

  • Handful of dark chocolate chips

Method:

  1. Preheat oven to 180°C and line a loaf tin with baking paper.

  2. Add oats to a blender or food processor and pulse into a course flour.

  3. Combine oats, coconut, almonds, baking powder and salt in a bowl.

  4. Add banana, nut butter, milk and vanilla extract to a blender and blend until smooth.

  5. Stir wet and dry ingredients together, then fold in grated zucchini and chocolate. Pour into tin and bake for approx 40 minutes until golden and a skewer comes out clean. Allow to cool before slicing.

Notes:

  • Store in a sealed container in the fridge for up to a week. This recipe freezes very well too!
